Sparkling Wine/Champagne
Champagne and most other sparkling wine is usually made from three grapes. Chardonnay also responsible for many of the world’s best white wines, Pinot Noir the great red grape of Burgundy and Pinot Meunier another red grape. The fact that the winemaking process then magically produces a white sparkling wine when two of the grapes are red adds wonderfully to the mystic of the world’s favourite celebration wine! Vintage Champagne is only produced in a few select years when the grapes are of good enough quality to produce arguably the best sparkling wine on the planet.

Pinotage
This grape is a cross of Cinsault, a grape used mostly for blending in the Rhone, and Pinot Noir, the great red grape of Burgundy. It is grown almost exclusively in South Africa. Abraham Izak Perold a Professor at Stellenbosch University successfully crossed the varieties in 1925.
"Pinotage is an earthy, spicy, deeply coloured grape with tobacco and plums on the nose, crushed blackberry fruit on the palate and a hearty, full, savoury finish."

BIO DYNAMIC WINES
Biodynamics is an agricultural system first developed by Austrian philosopher Rudolf Steiner at the start of the 20th century. It is based on organic farming, but goes beyond the obvious avoidance of chemicals and synthetic treatments, to a much more holistic and philosophical regard for the land. Some of its tenets cannot easily be explained, including farming by a calendar that respects the earth's magnetic fields and the rhythms of the sun, moon, planets and stars, and working with preparations that seem almost mediaeval: infusions or herbs and minerals, some, indeed, packed inside cow horns and buried underground.
